Ingredients:
For the chicken:
3 boneless/skinless chicken breasts
1 bottle of your favorite island-inspired marinade
Instructions:
In a quart size ziplock bag or in a bowl combine chicken and marinade
Cover, refrigerate, and marinate overnight
Cook on a pre-heated griddle or grill
Cut up chicken into pieces
Ingredients:
For the pineapple:
1 stick of melted butter
1/2 cup of rum
1 tsp of vanilla
1 tsp of cinnamon
3/4 cup brown sugar
2 cans of pineapple rings in juice (You can also use fresh pineapple spears)
Instructions:
Melt butter
Mix together butter, rum, vanilla and cinnamon
Wisk in brown sugar
Pour mixture over pineapple rings
Cook on Blackstone Griddle until golden brown
Serve with jasmine rice and your favorite vegetable!
